Instructions:

Unroll the thawed phyllo dough and cover it with a damp towel to prevent it from drying out.

After the final layer of nut mixture, finish with another 10-12 sheets of phyllo dough, brushing each layer with melted butter.
Using a sharp knife, carefully cut the baklava into diamond or square shapes.
Bake the baklava in the preheated oven for 45-55 minutes, or until golden and crisp.
While the baklava is baking, prepare the syrup by combining water, sugar, honey, lemon juice, and cinnamon stick in a saucepan. Bring the mixture to a boil, then reduce the heat and let it simmer for about 10 minutes. Remove from heat and let the syrup cool.
Once the baklava is done baking, remove it from the oven and immediately pour the cooled syrup evenly over the hot baklava. Let it sit at room temperature for a few hours to allow the syrup to be absorbed and the baklava to cool and set.
